Product Details

Picanha, also known as coulotte or top sirloin cap, is a triangular-shaped cut from the top sirloin. Its defining characteristic is the thick, even layer of fat that covers one side. This fat cap is crucial; as it cooks, it melts into the muscle, creating an exceptionally tender and moist steak with intense beef flavor. Picanha is traditionally grilled as a whole roast or cut into crescent-shaped steaks, always cooked with the fat cap on and sliced against the grain after resting.
